As Venere rice takes its characteristic color from the presence of antioxidants (anthocyanins) contained in the grain which is elongated and crunchy and from the scent of freshly baked bread: the less intense color compared to Venere rice is due to a different type of anthocyanins present and not to their lower concentration.
