Classic Method Sparkling Wine Pavò Franciacorta Extra Dry VSQ

Pavò Franciacorta Extra Dry Classic Method VSQ, obtained from grapes coming from the vineyards available to the company, is an atypical sparkling wine for this production area. It is a 100% Pinot Noir vinified in white and was born from the desire to enhance all the best and most suitable plots of Pavò: vineyards that give different characteristics and which lead to a sparkling wine unique in terms of aromatic completeness, elegance and personality.    The light colour, animated by a refined and persistent perlage, should not be misleading: the soul of this sparkling wine is given by the vinification of black grapes. The term "Blanc de Noir", a true French term, was used to indicate all those wines made with fine cuvées where one of the most austere and refined vines was on display: Pinot Noir or Pinot Noir. Blanc de Noirs are perfect for those looking for a wine with character, a protagonist of meals and special occasions. The credit for this great success undoubtedly goes to the first and most important protagonist, Pinot Noir. ANDa very delicate grape, which stands out for the curious pine cone shape of its bunch, a peculiarity from which its name also derives. An excellent vintage of Pinot Noir is the result of a never predictable balance between soil, climate and savoir faire. However, the result repays any effort.    This exceptional sparkling wine is not markedly dry but is rounded off by a slight sweet note and well balanced by the acidity which makes it perfect to accompany delicate dishes of fish, white meats and fresh cheeses.
