The silver needle tea belongs to the white teas and is mainly grown in China. White tea is a tea that is only 2% fermented, which is counted among the six types of Chinese tea, as there are: green tea, yellow tea, black tea, oolong tea, pu-erh tea, white tea. In addition to caffeine, white tea also contains health-promoting substances such as polyphenols, fluoride, potassium, zinc, iron, calcium and sodium. Silver needle tea is the highest quality white tea and is one of the finest teas in the world. It accounts for only about 0.1% of China's tea production and was formerly reserved for the emperor and high officials. Only young buds are picked for this tea in spring - nowhere else in the world does this happen except for silver needle tea. Around 30,000 of the delicate shoots have to be harvested by hand for 1 kg of marketable goods, whose silver-white hairs give this tea its fairytale name. The silver needle tea is delicate, elegant and slightly sweet in taste and has a clear, jade green to light yellow infusion color. It should not boil during preparation, but rather simmer for two to five minutes at around 70-80 degrees Celsius. Eight to twelve grams of the tea are recommended per liter; several infusions are possible. Silverneedle tea should always be stored in a cool, dry, airtight and lightproof place. If stored correctly, the silver needle tea can be kept for around 24 months.
