Fleur de sel is particularly valuable and good for your health. Fleur de Sel de Guérande PGI from Brittany is prized by haute cuisine, particularly because of its natural mineral taste, which gives a distinctive character to all dishes. Due to its special structure, it is much crunchier than table salt. Fleur de sel is mainly formed on summer days when the temperature difference, caused by the breeze, between the warm air and the surface of the salt marsh, is sufficient. It is blown back by the wind to the edges of the basin. The fleur de sel crystals trapped in plates on the surface of the basins are much finer than those of coarse salt. As it is never in contact with the clay at the bottom of the eyelet, it keeps its white color. “Coarse salt”, since it rests at the bottom of the eyelet when it is harvested, takes on a darker color (which is why it is often called “gray salt”). The fleur de sel is skimmed off by the salt workers using a wooden scoop.
