All types of pepper (white, black, green) come from the same plant but their tastes differ depending on their maturity and the treatment carried out after harvesting. To obtain black pepper, the peppercorns are harvested green, just before their maturity phase and stored in piles for a few days. Due to the fermentation process, they turn black and then shrink as they dry in the sun. For green pepper, the grains are deprived of the fermentation process with rapid drying, which preserves the green color of the grains.
