It owes this exceptional quality to optimal growing conditions in one of the driest regions of Europe – Murcia – where it is carefully harvested by hand, dried for 8 to 10 days in the smoke of holm oak, then freshly ground. Those who have never heard of it probably know it anyway. It is the secret ingredient of the most famous Spanish sausage: chorizo.
