It is cultivated in Piedmont. The starch content of Carnaroli gives the risotto its creamy side so delicious, and its capacity for absorbing flavors gives it real gastronomic interest. Thanks to its amylose content, it is never overcooked and the grain does not degrade. For even more flavors, it has been enriched with various vegetables: peppers, carrots, peas, celery, onion, zucchini. Once cooked, just a drizzle of extra virgin olive oil and a good Parmesan.
