In fact, the term "curry" refers to a mixture of spices with infinite variations and not a single spice. This curry comes from Madras, a port city on the Coromandel Coast in the state of Tamil Nadu in southeastern India, but it is used well beyond this region in India. Madras curry is also called "yellow curry" due to the presence of turmeric in its composition. Literally, the term "curry" means "sauce" and embodies a traditional cuisine where food is left to simmer for a long time with these spice mixtures in water or coconut milk in order to obtain this said sauce. Our Madras curry is very fragrant and can be used in a pan-fried dish or with coconut milk in a simmered dish (chicken, lamb, shrimp).Origin: France
