
Bulgur with kamouneh spices is an iconic dish from southern Lebanon. This traditional recipe combines bulgur, tomato and pepper concentrate, dried herbs and a subtle blend of spices (cumin, rose, marjoram, mint, chili, cinnamon, allspice and black pepper). Ready to use, this aromatic base makes it easy to make kamouneh salad: simply add olive oil, tomatoes and fresh onions. Its richness in taste and texture also makes it an excellent ingredient for stuffing vegetables (zucchini, eggplant, tomatoes, peppers), shaping kebbe balls, or creating balanced bowls. This mixture is prepared in an artisanal way by the Al Imad women's cooperative, in the village of Hariss in southern Lebanon.
