
Freekeh (or roasted green wheat) is an ancient cereal, the first traces of which date back more than 4,000 years. Legend has it that an accidental harvest fire gave birth to these beans with their characteristic roasted, slightly smoky and nutty flavor. Harvested before maturity, the wheat is then dried, roasted over a wood fire and then carefully rubbed to extract the grains. Our freekeh is carefully produced by a rural women's cooperative in southern Lebanon, using an artisanal and natural method, without additives or preservatives.
