The ducks are raised in the black mountain 10 km from our cannery; these gizzards are cooked in an artisanal way in their own fat, accompanied by salt and pepper for seasoning. These gizzards will be eaten defatted then seared in a pan, and cut into thin slices after cooking. They can be associated for example with a summer salad so that it constitutes the salty note.
