The legend : According to legend, during the 100 years war, a French Abbot hid and cared for a young wounded English soldier. He would have made him discover a beverage of his manufacture. He would have baptized this sparkling drink "Crémant" because of the fine bubbles which, rising to the surface, create a foam as delicate as cream. The Abbot is said to have got into the habit of pacing the valleys to work his vines when the camps withdraw, at sunset, when the light is magnificent and the valley shines. Vinification: The Crémant de Bordeaux Blanc Brut "Légende de Louis Vallon" is produced according to strict rules, respecting specifications specific to Crémants. The "Légende de Louis Vallon" is the result of a demanding selection by our oenologists, which has made it possible to identify batches of wines of optimal quality. The harvest is manual and the transport is carried out directly to the press using palox. The Crémant is aged for 36 months on slats in order to reach its ideal maturity. During these 36 months, the wine develops aromatic amino acids which make it an exceptional Crémant! Grapes: Mainly Cabernet Franc and Sémillon Tasting: This wine has light bubbles and a pale yellow color with green highlights. The nose is subtle and discreet. The palate is pleasant, rather long. The aromas are fine and complex with floral notes. Gourmet pairings: This Crémant will delight the palate from aperitif to dessert; Its unique character makes it an ideal tasting wine.
