Origin: Ethiopia. Yirgacheffe. Altitude: Cultivated between 1800 and 2100 meters. Variety: Heirloom and Yirgacheffe. Process: Washed Tasting: Round, complex, silky, structured coffee. High acidity. Flavors of dark chocolate, fruit such as stone fruit (cherry) and floral (jasmine) are appreciated. Score: 86.50 Ethiopia is the cradle of Arabica coffee, where the legend that narrates the discovery of coffee takes place. It is one of the main economic engines of the country and is part of its culture. Ethiopia Yirgacheffe coffee is part of the Sidama region, in the center of the country. In turn, it is divided into micro-regions, with exceptional characteristics. In short, it is an area with abundant rainfall and very fertile soil. One of the peculiarities of Ethiopia is that there are few coffee plantations. For its cultivation there is the so-called "garden coffee", in which coffee growers plant it near their homes, interspersed with other plants; and the "forest coffee", in which they are planted in forest areas seeking the shade offered by the tallest trees. These practices allow the existence of numerous species of coffee trees (they are called Heirloom), and it is considered organic. The number 2 refers to "grade 2", the classification given to washed coffees. We speak of washed coffee when, once pulped, the processing plants use water to remove the remaining pulp from the bean. Amara is the name of one of the largest ethnic groups in Ethiopia.
