 The 4 plantations of the assembly are located between 1700 and 1800 m, under plant cover. The plant cover of coffee plantations ensures greater biodiversity.
 It also ensures that the cherries ripen more slowly and allows the coffee to have greater aromatic power.  PROCESS In a few words: the harvest is manual and selective; after a fermentation time of 12 hours, the coffees are left to dry on patios for 8 to 10 days; then they are machined. A coffee, extremely clean, in a washed process, with the characteristic profile of this terroir, and in completely organic production.
