Organic extra virgin olive oil

The Cascavilla Organic Extra Virgin Olive Oil is a superior category oil, obtained directly from the olives of the organically grown olive groves of the Cascavilla Farm and solely by mechanical means. The entire production process follows the principles of a short, transparent and sustainable supply chain and each phase of the transformation of organic olives takes place at a controlled temperature to protect the nutrients and polyphenols, recommended for a healthy and balanced diet. The production of oil begins with defoliation and deramification and then moves on to washing and pressing, the moment in which the olives are pressed with millstones. The olive paste is pressed and reaches the maximum temperature of 26 degrees; after which it passes through the extractor from which the oil - now separated from the water - is obtained in its purity.
