East! East!! East!!! Di Montefiascone Doc

A historic, dry and mineral wine from Lazio. It owes its name to Bishop Fugger who went to Rome to be crowned by the Pope. On the road, he had sent his valet to scout out the inns with the best wines and point them out by writing “East!” at their doorstep. When he arrived in Montefiascone, he found this wine so good that he wrote "Est! Est!! Est!!!". In the mouth, it is tense, fresh and rather sapid. Maceration for 12 hours and pressing. Fermentation with temperature control and aging for 3 months on lees. Bright straw yellow color. Scents of white flowers and citrus fruits. Accompaniement: Serve between 10-12°C. It goes well with fresh cheeses like pecorino or fried vegetables, artichokes in particular.
