
Cocoa bar with Sicilian black bee carob honey The Sicilian black bee, which has populated Sicily for millennia, is distinguished by its dark color and small wings. It survived the glaciations, the pollution produced by man and globalization, however risking its total extinction in the 70s, when Sicilian operators began to prefer them and to import Ligurian bees from northern Italy. The Sicilian bee is very docile and productive, even at high temperatures, and develops the brood early: in the presence of winter blooms, it behaves as if it were spring. The honey it produces also has three to ten times more antioxidants than any other honey, as well as antibacterial and antifungal substances. In our bar, with no added sugar, a selection of single-origin cocoa is embellished with Sicilian black bee carob honey. A slow food presidium honey with a strong flavour, creamy consistency and whose scent is reminiscent of the carob fruit. The rediscovery of the origins and traditions of our land is an exciting journey.
