
Gigante is a municipality in the Huila region, one of the first territories in Colombia where the production of cocoa and coffee was developed. It is precisely in Huila that the Federacion de Cacaoteros was born in 1960, which encourages the cultivation of cocoa throughout the country. In recent years, however, coffee production has taken over and many old cocoa plantations have been partially abandoned. The Asogigante, association of Gigante cocoa producers, is directed by Christian, only 22 years old. Christian is constantly studying to offer a well fermented cocoa and to select and preserve the best old hybrid trees. The abandonment of the old plantations in favor of coffee crops meant that producers did not invest in replacing the oldest hybrids with new highly productive clones. This ancient cocoa, which is characterized by the fruity notes of blackberry, grape and ripe strawberry that alternate with floral aromas of violet and wild flowers, has been preserved in this way. A cocoa that represents a real treasure to be saved.
