Clos Triguedina - "me trigo de dina" - or if we translate the Occitan - "I can't wait to have dinner". This pretty place name is that of the family property of Jean-Luc Baldès. Sabine and Jean-Luc Baldès, still active and looking to the future, have invested in the creation of a Wine Pavilion dedicated to wine tourism. For the inauguration of this new building in 2019, Jean-Luc Baldès created a more modern and daring variation of the classic cuvée, Clos Triguedina: "Le Pavillon". Vineyard - Appellation: Cahors, South-West. Blend: 85% Malbec, 10% Merlot, 5% Tannât. Terroir: 2nd, 3rd and 4th Terraces of the Lot Valley, clay-siliceous and clay-limestone subsoil. Vines over 30 years old. Vineyard work & Winemaking: Very careful work in the vineyard with an eco-responsible commitment to soil preservation. Very rigorous vinification. Éaged in oak barrels for 12 months. Tasting: Intense nose of black fruits, enhanced with peppery and liquorice notes. The structure is long and complex. Beautiful balance between the expression of tannins, aromatic richness and suppleness. Food/Wine Pairing: A young vintage will accompany foie gras, red meats in sauce and game. After a few years of storage, it will pair perfectly with truffles, grilled red and white meats, game or even cheeses.
