We develop these pork rillettes according to the rules of the art of gastronomy. In our recipe, we find 95% pork meat selected from the Aubenas slaughterhouse just 10 km from our production workshop. We first candied our meat before adding juice to simmer it for several hours. Once the cooking is finished, we shred the meat by hand before putting our rillettes in jars and sterilizing them. Our old-fashioned rillettes are reminiscent of the taste of rillettes of yesteryear... Often during the tasting, customers are immersed in the rillettes of their childhood.
