We prepare these pork rillettes according to the rules of gastronomy. Our recipe contains 95% pork selected from farmers in Ardèche and Haute-Loire. We first confit our meat before adding juice to it and letting it simmer for several hours. Once cooking is finished, we shred the meat by hand before putting our rillettes in jars and sterilizing them. Our old-fashioned rillettes are reminiscent of the taste of rillettes from yesteryear... Often, during the tasting, customers are reminded of the rillettes of their childhood.
