The bunches do not undergo either destemming or crushing, they will undergo gentle and progressive pressing, so as not to crush the grapes and obtain the highest quality juices possible. The juices collected are clarified by natural cold sedimentation and then by settling, before being fermented. The temperature is maintained between 13 and 14 ° C in order to preserve the aromas of fresh fruit. 20% of the cuvée is aged in double barrels, the remaining 80% remain in stainless steel vats.
