Soil: Soil made up of rolled pebbles, mixed with very light sand (puddingstone) with a few clay veins. Average age of the vines: around 20 years. Vinification: Harvest 35Hl/ Hectare. Manual harvest in crates, sorted. Technical assembly by maceration & direct pressing. Thermo-regulated fermentation after static settling (stabling for 24 to 36 hours). Organoleptic characteristics of the wine: Visual appearance: Deep, bright yellow, sparkling colour, which does not tarnish over time. Olfactory aspect: Powerful nose, citrus (mandarin, pink grapefruit), white flower. Taste aspect: Ample palate, fruity, harmonious. These are wines that age admirably and can give exceptional bottles with an astonishing length in the mouth. Lively finish with a pleasant length. Serving temperature: 11°C Fresh but not struck.
