James Suckling: 91/100 A unique and recognizable bottle A surprising and refreshing whirlwind of aromas 100% Rolle, the emblematic white grape variety of Provence Ultimate is the emblematic cuvée of a truly contemporary Provence. Here, the Rolle grape variety exudes aromas of citrus fruits and in particular Menton lemon, enhanced with floral notes and white pepper. Its golden yellow color with sometimes green, sometimes barely copper highlights is the result of a small maceration in the press and the selection of the best juices from the plots, then of stabilization on lees, to enrich the bouquet and the mouth. Fermentation is held around 16-18°C, in different types of tanks. Reductive aging, on lees, precedes final blending before bottling.
