Serving temperature: 16 to 18°C Food-wine pairings: Game, red meats. Vinification itinerary: Cold pre-fermentation maceration (12°C) for 2 days, alcoholic fermentation at 28°C, vatting for 10 to 12 days, running off, malolactic fermentation at 22°C, aging in barrels for 10 months then in stainless steel tank for 3 months.
