Red Onion Raisin and Chilli Pepper Jam

This jam is one of the favorite combinations for aperitifs and starters. Especially with cheeses and meats. To produce it (always in an artisanal way) I chose the red onions of my land, sweet and sunny, and I combined them with the fiery and decisive character of the chilli pepper to give them even more liveliness, which however softens thanks to the raisins, thus creating a trio of gourmet flavors. Ingredients - red onion 66%, raisins, chilli pepper, sugar.
