It is soft, enveloping, fresh and fruity, with hints of tropical fruit, yellow flowers, chamomile and aromatic herbs. The Maria Costanza Bianco Dop Bio wine is a base of Chardonnay and Inzolia, in which tropical fruit is the key that accompanies the nose and palate in a refreshing and highly satisfying taste experience. The Maria Costanza Bianco Dop Bio wine is made by the Milazzo winery starting from a blend that features a great native grape variety, Inzolia, and an international one that finds interesting qualitative peaks in Sicily, the Chardonnay. The vines of both varieties are cultivated with the guyot system, and have their roots in a subsoil composed mainly of marl rich in limestone. The grapes, once harvested during the manual harvest, are softly pressed, fermenting alcoholicly both in steel and, for a small part of the total mass of the wine equivalent to 10%, in barrique. This division between steel and wood then continues also during the maturation phase, which lasts for 6 months. Milazzo, producer of our Maria Costanza Bianco Dop Bio wine, is a production reality born in Campobello di Licata in Agrigento; They were among the first Sicilian winemakers, between the end of the seventies and the beginning of the eighties, to enhance the winemaking from native Sicilian vines. Their cellars are mostly underground and designed with the least possible environmental impact in mind. Built with materials designed to contain energy consumption and obtain low emissions in air conditioning and with the aid of technologies for obtaining maximum hygiene and ideal care of the product. For pressing, pneumatic presses with a central lung are used with very low operating pressures to operate with great delicacy on the berries; The maturation of their wines in steel takes place entirely "sur lie" by suspending the faeces in order to favor the transfer of the aromatic components of the yeast into the wine. Their barrique cellar extends entirely in the underground part of our cellars and contains over 500 barriques intended for the refinement of both white and red wines, and some bases for classic method sparkling wines. Here the barrels are filled and checked. The passage in barrique plays a primary role in guaranteeing the best evolution of our wines. The choice of their woods is fundamental. Our barriques are all produced in the best "tonnellerie" strictly with oak wood. We use new barriques in common with a renewal cycle every five years. their cut. The most delicate moment. After the harvest, pressing, fermentation and the various maturation and refinement processes, each wine in our collection undergoes this delicate phase, which seals the passionate work of the oenologist and his collaborators, before entering the bottle where it continues to evolve until it is poured into the chalice. It is in this phase that the long work of creating the wine comes to an end, a path made up of patience and technique which sometimes winds its way over many years. Our company was in fact the first to blend Inzolia and Chardonnay to give life to this elegant white wine. The work in the cellar: Pressing at controlled temperature. The juice, further refrigerated, undergoes a clarification of 12-24 hours after which the alcoholic fermentation is started. Part of the musts ferment in steel at low temperature and part ferment in French oak barriques, specially selected for the maturation of white wines. The wines do not undergo malolactic fermentation and are kept on their feces until the following spring by means of "batônage". The wine ages at least 2 months in the bottle before being marketed. Sensory notes: It has a beautiful straw yellow color with green reflections. The nose is seductive. In the opening, hints of white flowers go well with aromatic vegetables, then enveloping notes of flowers and citrus leaves emerge.
