Pistachio olives are a traditional recipe of Calabrian gastronomic culture. Tradition dictates that the olives are first crushed ("pistached") one at a time with a fairly large and heavy stone, and then seasoned with a typically Calabrian mix of extra virgin olive oil, fennel, chilli pepper and garlic.
