Île Four Premium Select «Junmai Ginjo» sake compares to regular sake like single malt whiskey compares to plain whiskey! For this sake we take two very special types of rice (Yamadanishiki and Akebono) and first polish off 45% of the outer layers to get to the pure inner core. Then, in a very labour-intensive process, we very slowly brew this particularly pure, clear sake, which, with a light, quite dry and refined taste, is one of the top 6-7% of all sake produced in the world! To eat: Dry, with low acidity and a little lighter in body, but also very finely structured and complex, Île Four Premium Select is an excellent accompaniment to all meat dishes without too heavy sauces, pasta dishes, and of course all types of fish. Enjoy slightly chilled (like white wine) or as a premium sake cocktail! 16% vol. tasting note Butter and raisins in the deep aromas, with a hint of melon in the niches; a little wood in the depths of the taste.
