A name that is well explained by its long, straight and slightly flattened shape. It is also thinner, firmer and less fatty than other types of sausage. Originally made with Iberian pigs, this small dry sausage is distinguished above all by its recipe which favors lean meat, with just a small proportion of bacon to give it the right texture.
