The chanterelle is a very common mushroom in our Landes forests. We couldn't make a range of preserved mushrooms without offering it to you. Our chanterelles therefore come from and are preserved natural in our workshops in our artisanal cannery in Castets. Find our canned Chanterelles des Landes online to enjoy all year round. From the same family as the chanterelle, the chanterelle is a small mushroom deeply linked to the Landes maritime pine forest. It grows in large numbers from the first cold weather, in November and December. The hardest part is not finding it, but picking it up... When cooked, it gives off a very pronounced scent of humus and undergrowth. A delicate mushroom, it should not be overcooked, but added at the end of cooking in sauces or juice (that of a chicken for example). This moisture-loving fungus likes the shade of fir trees and is often found at their feet. The clumps it forms always contain very small immature individuals clumped together with the “adults”. They must then be harvested one by one, either by cutting them with a nail or a knife: a few days later, the second harvest will be assured! Not very tasty and with a slightly elastic consistency, this species however has the advantage of growing in groups of numerous individuals at the end of the season, at a time when other mushrooms are starting to become rare. It is also appreciated by certain forest animals, deer in particular, and it is not uncommon to observe tufts cut at ground level of which only the base of the feet remains. Some mushroom pickers then believe that human competitors have preceded them, unaware that they are not alone in enjoying the delights of the woods... With its delicious scent, chanterelle is an ideal accompaniment to chicken, meat, sauce or risotto. Preparation advice: Drain the chanterelles. Brown them in a little butter. Season to your taste and serve as an accompaniment to poultry or white meat.
