LANDAISE PIPERADE

Piperade in jars is a typical Basque preparation, which differs from ratatouille by the absence of zucchini and eggplant. We know that our canned Landaise piperade will bring you comfort when summer is over with its sunny taste. All the flavors of the South West in an artisanal preserve, 100% homemade in our cooking workshops with quality local products. We buy our tomatoes from local producers like the Bastelica family who grow old varieties behind Aire sur Adour. Grown in open ground on the hillsides of Chalosse, Gers or Lot-et-Garonne, our tomatoes, peppers, onions and our famous sweet peppers from Landes, deliciously stewed by long cooking, accompanied by aromatic herbs, bring to your plate all the flavors of summer. Delight your taste buds with this simple pleasure! How do we make our piperade? In a drizzle of olive oil, our cooks brown the onions. They then add the peppers, peeled tomatoes, garlic, thyme and bay leaf. Then, they will cook over low heat for around twenty minutes. They let it simmer well. This is a delicious garnish that will make you a success. Every year since 1998, on August 15, the town of Salies-de-Béarn hosts the Piperadère, a festival celebrating the piperade. Different teams compete in a culinary competition to obtain the “king of piperadère” trophy which rewards the best piperadère. Preparation advice: Reheat over low heat, stirring regularly. Ideal with all your South-West dishes. Recipe idea: the famous piperade egg ham, an evening dish par excellence which combines the sweet taste of piperade with the softness of fried egg and pan-fried Bayonne ham. This cooked dish is also suitable for vegetarians and vegans. Our canned piperade can also serve as a base for a good chicken or tuna Basquaise.
