Organic Landes asparagus

In the Landes she is the queen of spring. You surely know Sand Asparagus: in “protected geographical indication”, it grows on its sandy dunes. It is a white and delicate asparagus with a slight nutty taste. We select our asparagus from local producers in the Landes. Find our artisanal canned asparagus which is now part of our range of organic canned vegetables. In cooking, we use green, white or red shoots: the freshness of the stems is judged according to several criteria (firm and brittle asparagus, of the same thickness, with tight tips) and these qualities make it possible to obtain uniform cooking. When purchased, the asparagus must exude a pleasant scent of ripe ears of wheat, the feel must be both firm and supple under the finger and resistant to breakage (crunching test between the fingers), the heel should not be too dry (when pressed, the juice that emerges should not be bitter), which will indicate recent picking. White asparagus grew entirely underground, in the absence of light, which gives it a delicate and very fine taste. Purple asparagus is very fruity. It is a white asparagus that has been let escape from its mound and whose tip turns purple under the effect of the light. It takes on a slight bitterness. Green asparagus grew in the open air and owes its coloring to the normal process of chlorophyll synthesis which develops in sunlight. It offers a strong flavor and an almost sweet bud. This is the only asparagus that does not need to be peeled. Wild asparagus is used like green ones. The plus of the product: Manufactured 100% from fresh products from organic farming certified by ECOCERT FR-Bio-01. Without preservatives or additives. Preparation/recipe advice: Drain your asparagus gently but do not rinse it. Pour them into an asparagus dish and enjoy them with mayonnaise or a good homemade balsamic vinegar vinaigrette. Some recipe ideas: White asparagus gratin with béchamel sauce Asparagus and bacon quiche You can also rework your asparagus into velouté, cream or sauce.
