TOMATO TOURIN

Our canned Tourin with tomato is our latest addition to our range of canned velouté for sale online. It is made from good Landes tomatoes and cooked on our premises. It is an artisanal preserve that we are proud of because tourin is part of our local customs in the South-West. It warms our hearts when we return from the ferias! Tomato tourin is a dish originating from France and more particularly from the Gers department. It’s a French gastronomic specialty! Tourin, torrin in Occitan, sometimes called ouliat (“tasty”), is a garlic, onion or tomato soup. It is a dish known in the great South-West, from Périgord and Bordeaux3 to the south of Toulouse. When we make our preserve of Landaise piperade, we recover a good tomato broth which we rework to make a delicious tomato tourin. We buy our tomatoes from local producers like the Bastelica family who grow old varieties behind Aire sur Adour. When we taste this tourin, a whole bunch of memories come back to us because at home in the Landes, when we came back from parties or fairs, we made this tourin to enjoy with friends. Indeed, tradition dictates that during a drunken evening (weddings, parties), the last ones still standing wake up the less courageous to serve them tourin at improbable hours. Tourin is often served to newlyweds, early the morning after the wedding. Preparation advice: Reheat over low heat in a saucepan, stirring lightly. It can be garnished with a little grated cheese and/or a few garlic croutons. It is customary in France to pair a regional dish with a wine from the same region. To pair the tourin with tomatoes with a wine from the same region, we recommend a rather “young” red wine from the South-West vineyards such as a good red Coteaux de Glanes, a red Thézac-Perricard, a red Comté Tolosan, a red Brulhois or even a red Tursan.
