Tasting note Aromatic nose with notes of acacias, white-fleshed fruits with a tangy touch. Supple, round, fleshy attack on the palate, with a lemony evolution. Food and wine pairing This wine can be served as an aperitif as well as with grilled prawns or roasted scallops with herbs. Heritage Cuvée – White – 2021 AOP Côtes de Provence Alcoholic degree 12.5% Sandy clay soils Grapes 70% Rolle – 30% Semillon Vines and harvest Planting density of 4500 vines/ha 12 to 15 years old Double Royat cord pruning Reasoned culture Mechanical harvest – done at night, from mid-August to the end of September Winemaking Closed-cage pneumatic press In thermo-regulated stainless steel tank - Each grape variety is collected individually in vats after measured pressing and careful settling - Pre-fermentation stabilization for 10 days at around 8°C - Fermentation controlled by maintaining the temperature between 16°C and 17°C Aging in thermo-regulated stainless steel vats – on fine lees – duration 1 month Service temperature 8°C
