This process involves the use of water (H2O) for the extraction of caffeine. Green grains are rinsed for a long time with fresh water, the caffeine thus being dissolved in the water. The decaffeinated beans are dried in hot air and cooled in a stream of cold air. Once roasted, the beans take on a characteristic purple color. It gives a fragrant and very tasty taste.
