The result of 3,000 years of know-how, this cheese is emblematic of the Béarn region and the Basque Country. With a natural gray, light brown, beige or mahogany rind, its paste is semi-hard, often pierced with small holes evenly distributed. On the palate the paste is first dry and salty, then a sweet and tangy flavor develops.
