Since spring 2022, the farm in the Dordogne where the sturgeons come from has been labeled ORGANIC. So we can offer you this brand new product. As with other fish, we work whole fillets in our premises in Auch (Gers, Occitanie). First, we salt by hand with unrefined dry salt. Then, we smoke them with beech wood, before cooking them slowly at low temperature. They are then cut into pavé and vacuum-packed. We add a mix of 5 berries on our hot smoked sturgeon. Hot-smoked sturgeon can be eaten at room temperature, about 30 minutes after coming out of the refrigerator as a main course or as an appetizer. Product ready to consume. To be consumed at room temperature
