Since spring 2022, the farm in Dordogne where the sturgeons come from has been certified ORGANIC. So we can offer you this brand new product. As with other fish, we process whole fillets in our premises in Auch (Gers, Occitanie). First, we salt it by hand with unrefined dry salt. Then we smoke them with beech wood, before cooking them slowly at a low temperature. They are then cut into cubes and vacuum-packed. We add a mixture of 3 berries to our hot smoked sturgeon. Hot smoked sturgeon is best enjoyed at room temperature, approximately 30 minutes after removing it from the refrigerator as a main course or starter. Product ready to consume. Consume at room temperature
