120g Sardine from Rianxo in extra virgin olive oil. Captured in July/August with the “xeito” (traditional fishing gear) and canned on the same day. The “xeito” is a drift gillnet fishing technique with a long tradition in the town of Rianxo (Ría de Arousa). It is respectful and sustainable, since it is selective, not intensive and without discarding. Packed in a traditional way, piece by piece, by expert hands. The fish goes from the sea to the can in about 4 hours, in order to preserve all its qualities with maximum freshness. To enjoy with all the senses, enjoying the view at the opening of the can, until you appreciate all its envelope and texture on the palate. An exclusive delicacy. The crews are made up of sailors from the area, with a lifetime linked to the sea. The catches are auctioned at the Rianxo fish market and have all the guarantees of the “PescadeRías” certification. The Bou de Vara sardine is caught in July, when its culinary characteristics are at their optimum. The sailors go out “á lusada”, returning to land with the first light of day, when the fish is at its best preparation moment. This is removed from the nets one by one, maintaining the integrity of the scale and the meat, without piling up so that it does not crush, and with natural cold, avoiding direct contact with the ice. The best ingredients are used, such as olive oil extra virgin in its maximum proportion, to make a truly exceptional final product.
