120g Sardine from Rianxo in extra virgin olive oil. Captured in July/August with the “xeito” (traditional fishing gear) and canned on the same day. The “xeito” is a drift gillnet fishing technique with a long tradition in the town of Rianxo (Ría de Arousa). It is respectful and sustainable, since it is selective, not intensive and without discarding. Packed in a traditional way, piece by piece, by expert hands. The fish goes from the sea to the can in about 4 hours, in order to preserve all its qualities with maximum freshness. To enjoy with all the senses, enjoying the view at the opening of the can, until you appreciate all its envelope and texture on the palate. An exclusive delicacy.
