Thanks to a long-standing partnership with Vincent Pestre, a farmer from the Vallée de Brévenne (Monts du Lyonnais), we know and master our product from sowing. We only use one variety: it is selected for its taste, smoothness and whiteness. Our producer partners blanch their cardoon in the fields of the Lyon region to preserve their qualities and then taper them by hand to guarantee the absence of threads. It has just obtained the mention "High Environmental Value" Our cooking scale makes them tender and without bitterness. A vegetable with a delicate taste, it is eaten with plain meat and fish, or as a gratin.
