Vermentino of Sardinia D.O.C. CHARACTERISTICS: ♦ Organoleptic characteristics: - Color: straw yellow, with greenish reflections. - Perfume: vegetable scents of Mediterranean maquis with intense floral scents. - Taste: enveloping and caressing with a full, soft, mineral and particularly savory taste. ♦ Grapes: 100% Vermentino ♦ Alcohol content: 13.50% ♦ Production area: Senorbì territory, characterized by medium-textured soils composed of clayey limestone, medium hilly location. ♦ Production technology: great care in the cultivation of the vineyard characterized by a yield per hectare of 90 quintals obtained with careful thinning of the bunches. The harvest is done manually with a careful selection of the bunches harvested at the ideal moment of ripeness to achieve the right sugar-acid balance. The wine is fermented at low temperatures to enhance its characteristics. After a period of aging in steel, the wine is bottled. ♦ Aging: to be drunk young within two years of the harvest. ♦ Conservation temperature: 18-20 °C in cool, dry places away from light. ♦ Serving temperature: to be served chilled at 10-12 °C. ♦ Combinations with food: seafood appetizers, first courses, including savory ones, grilled fish. ♦ Vintage: 2020 ISTRALE, very ancient name with which the Sardinian populations called the sacred bipenne. The image, very schematic, is taken from a well-known Sardinian bronze documentary source of the 2nd millennium BC, Sa seguredda (the small axe) until a few decades ago resisted as an indispensable apotropaic object among the Sardinian populations of the interior. It can therefore constitute a symbol of good wishes and prosperity.
