Cannonau Doc CHARACTERISTICS: ♦ Organoleptic characteristics: - Colour: intense ruby red, with orange reflections as it ages. - Bouquet: intense and persistent, ethereal, winy, with hints of berries. - Taste: warm and enveloping, full-bodied, rightly tannic. ♦ Grapes: Cannonau. ♦ Alcohol content: 14.5% ♦ Production area: entire Parteolla area and surrounding areas, characterized by medium-textured soils made up of clayey limestone of Miocene origin, medium hilly location, sub-arid climate. ♦ Production technology: after destemming and crushing, the grapes are sent to fermentation where they remain in contact with the skins for a period of seven days. After racking off the Cannonau di Sardegna DOC it is aged in barrels and in vitrified cement tanks. It is released for consumption no earlier than 1 April following the harvest. ♦ Aging: it is preferable to drink it after at least one year from the harvest date, to allow the product to age in the bottle. It is a medium-aged wine, to be consumed within 3-4 years of the harvest date. ♦ Conservation temperature: in cool, dry places away from light. ♦ Serving temperature: 18-20 °C. ♦ Combinations with food: ideal for roasts, game and cheeses with a strong and spicy taste. ♦ Vintage: 2019 ÓJE, one of the most recurring representations of the ancient culture of the Nuragic Sardinians is given by the triangles with opposite vertexes. The theme certainly originates from the number, three, which is reiterated, and from the markedly taurine shape. The juxtaposition of the signs aims above all to be a schematic synthesis of the male and female difference of the abstract Sardinian divinity. Finally, the five triangles, with the symbolism of the fingers of the hand, are a sophisticated reference to the remarkable strength and "full" taste that distinguishes this wine.
