International blend of Merlot, Syrah and Cabernet. ♦ Alcohol content: 14% ♦ Production area: Senorbì territory, characterized by medium-textured soils composed of clayey limestone, medium hilly location. ♦ Production technology: after destemming and crushing, the grapes undergo a period of maceration on the skins for about a week at a temperature of 26/28°C. Aging in vitrified cement tanks until bottling. ♦ Aging: after bottling, a period of refinement for a few months before being consumed is preferable. ♦ Conservation temperature: in cool, dry places away from light. ♦ Serving temperature: 18-20 °C. ♦ Combinations with food: accompanies meat dishes and savory cheeses. ♦ Vintage: 2019 LATE EVENING, the image of the taurine and bipenne moon in the waning phase is meant to be a delicate suggestion for the nocturnal softness of this wine, suitable for some intense and particularly important moments. The very pronounced red is also a bull's-eye symbol which draws intensity from the typical handcrafted Sardinian tiles which act as a graphic echo of the one located higher up. Both the lunar arc and that of the clay representation constitute a clear, coherent, organic reference to the name Tarda Sera conceived for this exceptional wine.
