Terralba - Bovale Riserva - Denomination of Controlled Origin 100% bovale The harvest is done manually using plastic boxes for transport. This wine is obtained from the grapes of a single vineyard from the age of 50 with a production of 45 quintals Ha After harvesting the grapes in crates, they are destemmed and sent for vinification in the Ganimede icator for about 9 days at a temperature of 28 degrees, using the energy produced by fermentation to carry out the pumping over and soft mixing of the marc on the must, favoring extraction of aromas and coloring substances without the aid of the mechanical action of the pumps. After about 4 months of permanence in steel, the wine is aged in French oak Tonneau with a capacity of 10 hl each for about 10 months and then bottled about 18 months after the harvest. SERVICE TEMPERATURE: To be served at a temperature between 18 and 20° C FOOD PAIRINGS: Game, roasted meat and eels, mature cheeses.
