Also called “broccoletti”, “rapini” or “friarielli” and translated into French as “broccoli-rave”, it is in reality a hybrid between broccoli and cabbage. It has green, pointed leaves and a bud that resembles a head of broccoli. This plant with a strong taste has digestive properties and is rich in vitamins and mineral salts. The leaves of this vegetable are generally eaten raw in salads, cooked in pasta or simply steamed. The cime di rapa is carefully harvested in our Gargano region (Puglia, Italy) then it is harvested, cooked and mixed with olive oil and seasoned with local herbs. Nothing more! Cime di rapa is a must in Pugliese cuisine: it is particularly known for its association with orecchiette “alla cime di rapa”. It is also found on certain pizzas or in soups. These vegetables are grown and processed by two artisan brothers on their family land in the Gargano Natural Park (Puglia, Italy) - a major agricultural territory in the Alto Tavoliere agricultural zone - and are BRC food certified. They are harvested when ripe, at the best time of the season, to have maximum freshness and flavor. +The small yellow flowers that appear on the top of the rapa during flowering are edible.
