
Discover our Ziti Pugliesi, artisanal and typical of the Puglia region. These long, cylindrical pastas are similar to tubetti lisci but much longer. Also called “candele”, ziti maintain a firm and tender texture after cooking and absorb dense sauces well. Ziti are cut Italian style - into 3 pieces - before cooking and are most often cooked as gratins with ricotta or smoked provola. The Amicis family has been making its artisanal pasta from durum wheat from the Gargano natural park since 1980 in Serracapriola (Italy). They offer a real artisanal pasta, produced with stone-hulled wheat semolina, drawn in bronze then dried at 26° using a traditional method: slow, horizontally and at low temperature.
