
Stracciatella is a traditional specialty of Puglia: it is nicknamed "heart of burrata" or "crushed burrata" 🤤 Made by our caseificio Il Parco in San Giovani Rotondo, with buffalo milk from the Puglia region. Stracciatella is made from hand-pulled cheese strands and crème fraîche. It is nothing more and nothing less than the heart of the burrata. Its taste is fine and elegant, with a creamy texture in the mouth. It is a pure delight eaten as is, on a nice slice of toasted bread garnished with a drizzle of extra virgin olive oil.
