Thistle Honey Oltresole is an Italian artisan product. The organoleptic properties of thistle nectar give the honey a distinctive strong aroma and flavor: sweet with floral scents and a slightly astringent aftertaste. The light amber color acquires light opalescent shades with natural crystallization at lower temperatures. It is extraordinary in sweetening white and green tea which enhance its floral-fruity aroma. Excellent pairing with more delicate spreadable cheeses to which it gives character. Like all honeys, it is invigorating antioxidant antiseptic antibacterial healing and alkalizing: therefore, compared to sugar it does not favor tooth decay and facilitates the fixation of mineral salts in the human body. In addition, thistle honey has digestive properties, stimulates and detoxifies the liver, improves circulation and is a mild vasoconstrictor. PAIRING: It is a honey with a strong and characteristic flavor, its intense aroma recalls that of the flowers of the Mediterranean countryside rich in very sweet aromas.
