SUNFLOWER HONEY 250 g

The Oltresole Sunflower Honey is an Italian artisan product. Sunflower honey is a hymn to summer. It is harvested between the end of June and August when the large yellow flowers smile at the hottest sun of the year, giving a nice glimpse of our countryside. The color of this honey also recalls the warm season a singular bright and luminous egg yellow hue compared to the more or less intense amber of the other monoflora which represents its peculiar visual characteristic. Sunflower honey is a delicate honey: gentle in aromas and slightly persistent aromas, slightly fruity (especially ripe and processed apricot) and vegetable (hay straw pollen wax honeycomb tomato preserve) with an acidic taste, sometimes an aftertaste of star anise and a refreshing sensation. Due to its sweetness due to the high concentration of glucose and its light and delicate flavor, sunflower honey is particularly suitable for preparing sweets and biscuits or as a sweetener in tea and herbal teas. PAIRING: Sunflower honey has a yield in the kitchen that is the perfect opposite of that of acacia honey. Sunflower honey has a very high degree of crystallization due to the high amount of sugars it contains. Its crystallization times are reduced so it is not uncommon to find it in a solid or lumpy semi-solid form. When tasted, it has a strong and persistent herbaceous aftertaste. This type of honey in cooking is suitable for lacquering grilled meats, especially those with a strong wild flavor such as duck, pheasant, pigeon or quail; as well as the most common use in preparing sweets and biscuits or as a sweetener in tea and herbal teas. WELLNESS AND HEALTH: In general, Sunflower honey is an excellent substitute for the sucrose sugar that we commonly use. It is rich in fructose and glucose responsible for its rapid crystallization and has a higher specific sweetening power than this sugar. This means that a smaller amount is enough to sweeten drinks and sweets. This implies a lower calorie intake. One of the best known healing properties of sunflower honey is its remineralization ability. It is a real natural supplement of mineral salts, especially calcium and magnesium, useful for preventing the weakening of bone structures, particularly in people who have risk factors for osteoporosis such as postmenopausal women and the elderly. FUN FACT: the sunflower Helianthus annus owes its name to the curious botanical phenomenon known as heliotropism which leads its flowers and younger leaves to rotate during the day in the direction of the sun in order to intercept its rays. In oriental culture it is considered the symbol of immortality while the ancient civilizations of South America considered it the earthly materialization of the divine sun and therefore it was an object of worship for them. In the language of flowers it is considered a symbol of adoring love but also unhappy perhaps because it is destined to follow the rays of the sun without ever being able to reach them. The sunflower was brought to Europe by H. Pizzarro who "found" it in Peru in the sixteenth century it is therefore very likely that the Greek myth mentioned by Ovid in the Metamorphoses actually referred to the Heliotrope also called vanilla flower because of the perfume emanated from its flowers.
